baked tepiary beans




One cup tepiary beans dry

1 potful of boiling water

1/4 c. molasses

1/3 cup ketchup

2 tablespoons mustard

One or 2 teaspoons of salt to taste

Two strips of bacon raw

One small onion

One can of tomato purée

Two cloves garlic

Pepper to taste not very much

One to 2 tablespoons sugar, optional, but recommended


in an effort to get better way to have more potassium in my diet, I stumbled upon tepiary beans which have extensive amounts of both protein and more importantly, for me potassium so I decided to make them parable by coming up with a baked bean recipe for them.


To reduce the amount of gas that the beans make boil water and add the beans to it and boil for 10 minutes. Let the beans sit in the hot water for two hours covered. Once this time elapses allow the beans to soak overnight. The next day discard all the water. in a medium or small crockpot, combine all the ingredients except for the pot of water which you used yesterday. Set things to high. You might need to add a little bit of water and tomato paste as well to thicken things a bit. let the mixture cook until the beans turn dark brown. I also recommend taking off the cover for the last hour of simmering to allow extra water to evaporate.
