Homemade corn tortillas




2 cups Maza harina

1 1/4 cups water

1 tsp xanthan gum


Combine water, xanthan gum and Matza harina until well mixed.

Heat a cast iron pan to high heat. Lightly oil with spray can.

Lightly flour (using corn flour) rolling surface. Take a palm full of dough, and roll it out till its 1/8 of am inch. Put onto hot pan and cook until dough starts to puff up. Flip, repeat. Takes about 7 mins per tortilla. Pit onto wire rack and allow to cool.
