Chocolate mousse


1 cup chocolate bits

4 tbsp strong coffee

4 egg yolks

4 egg whites

1/4 c. mango purée

¾ cup caster sugar

6 oz butter


Separate eggs, beat yolks and Add ¾ cup sugar in a bowl over warm water until foamy and thick. Mixture should be too hot to the touch. Once done beat to ribbon by immersing the bowl in water.

Melt chocolate and coffee set aside, I use the hot water from the eggs, and just place the bowl in that. No need to boil as this will ruin chocolate.
Beat in 6 oz butter into chocolate. Once done add to the cooled egg mixture.

Stiff peaks for egg whites, mix 1/3 into the chocolate mixture, fold rest into the mixture.
